Great Canadian Gaming Corporation is seeking it's next Inventory Control Coordinator to join it's team! As Inventory Control Coordinator you will be responsible for providing support, training and guidance with the inventory control software Optimum Control and the point-of-sale system Squirrel for all culinary operations in BC. In addition, this position will be responsible for ensuring accuracy of food and beverage inventory counts, recipe audits and assisting F&B team members with evaluating inventory variances and potential cost control measures. Key Accountabilities: Supports food and beverage operations regarding Optimum Control and the point of sale system Squirrel Runs and audits Optimum Control inventory reports and reports to F&B team members as needed Assist with Aud Optimum Control inventory variance reports and identifies areas of improvement required to improve costs to the culinary team Oversees end of month inventory counts ensuring physical counts are performed according to established procedures and identifies potential errors for correction Updates inventory and analyzes inventory usage variances, reports major variances to F&B Director, F&B Manager, Executive chef and the custodian of assets for the appropriate outlet Holds the custodian of assets for each outlet accountable for measures to improve identified variances and follows up with inventory spot checks as required Maintains the Optimum Control database which includes item, recipe and vendor maintenance Updates items for more efficient recipe units of measure as appropriate to the method of preparation required by the culinary team by means of conversion factors or updated recipes Designs efficient means of organization within Optimum Control to maximize the benefits of sales and menu engineering reporting that aligns with the requirements of the culinary team Ensures the sales mix from POS is updated and revenue captures outside of single recipes are tracked by the food and beverage operations by means of the buffet wizard Reports on daily, weekly and monthly inventory as required to resolve variance discrepancies Verifies and tests recipes in Optimum Control for accuracy of appropriate weights and measures, correct items being used and factors which may impact a recipe being complete or costed accurately Verifies that the point of sale system when used generates the expected result in the database by auditing POS ID values and names to ensure accuracy of sales mix imports to Optimum Control Assists Sous Chefs with menu development, weights and measures and appropriate yield calculations; including building recipes and advising on pricing based on financial requirements Calculates theoretical and actual cost of goods sold ; Identifies deficiencies in cost control measures an communicates to the appropriate custodian of assets Provides training to any new F&B users and retraining where required using established Optimum Control module training materials Develops and cultivates strong working relationships with all food and beverage departments Tracks and analyzes consumption rates and inventory levels; identifies and recommends alternative products and services to reduce cost, add value and/or increase overall efficiency Maintains the buffet bid list monthly and identifies potential products to reduce costs Reviews and reports on waste logs as required Reviews sales mixes and waste reporting for par level stock review and reports to food & beverage operations recipe costs with negative impacts on financial goals Audits all installed databases periodically for appropriate day to day usage and database integrity and identifies any weaknesses or shortfalls to be corrected Identifies technical issues negatively impacting Optimum Control’s operations and corrects them for all sites, escalating to the regional inventory control lead, IT or Tracrite as appropriate Liaises and communicates effectively with all appropriate business units Education and Qualification Requirements: 2-3 years Food & Beverage experience, culinary education such as ITA red seal or equivalent a benefit Ability to exceed internal and external customer expectations through timely, effective and service oriented communication Computer literacy in MS Office Experience with Optimum Control (or other equivalent inventory system) Experience with Squirrel (or other equivalent system) Food Safe - Level 1 Serving it right Who we are!
