JOB PURPOSE : The HACCP Coordinator is responsible for implementing and administering the HACCP plan both at the Slaughtering pant in Breslau and the distribution plant in Cambridge to ensure that Conestoga Meats' objective for food safety, quality and regulatory compliance meet or exceeds regulatory requirements. Other responsibilities include participating in second

  • and third-party audits, keeping the Manager of Food Safety & Quality Assurance informed on all aspects of areas of responsibility. The role also looks after reviewing and updating the training programs on a yearly basis, or as required, and being involved in orientation for new employees and providing on-going training for all employees.

KEY JOB FUNCTIONS / ROLES / RESPONSIBILITIES : Maintenance of HACCP plans and documentation (CMP HACCP Plan & CMPDC HACCP Plan)

  • Maintain and update pre-requisite Programs, HACCP Plans and SOP's
  • Maintain deviation file and follow-up on deviations for any non-compliance situation
  • Reassess and validate the HACCP plan at minimum once a year or as required

Liaison with CFIA inspection team

  • Compliance with all CFIA CVS requirements
  • Ensure the establishment and products comply with applicable legislation for Standard inspection process (SIP)
  • Provide assistance to CFIA inspection staff when carrying out SIP tasks.
  • Conduct follow-up on SIP reports to address issues.
  • Taking effective corrective action when there is any non-compliance situation.
  • Ensure employees are properly trained on humane hog handling practices.

Monitoring and verification

  • Ensure critical control points and prerequisite elements are monitored and documented and initiate corrective action as per plant FSEP/ HACCP Plans
  • Ensure processes and the environment are monitored to meet Good Manufacturing Practices
  • Review and analyze E.coli, environmental and area swabs results and follow up
  • Maintain and check the sanitation documentation according to established SOP's
  • Verify CCP's, prerequisite and HACCP documents and records
  • Conduct on-site observation for pre-reqs monitors, CCP operators, monitors and verifiers
  • Assist maintenance manager in maintenance of PM program and asset list

Food Safety Team

  • Keep Manager of Food Safety & Quality Assurance informed on all aspects of areas of responsibility
  • Contribute positively to the Food Safety Team
  • Provide back-up coverage for the FSQA Supervisor
  • Assist Food Safety & Quality Assurance team in third party audits, foreign country audits.
  • Maintain entire export certification program (for all countries CMP exports products)

GMP and HACCP Training

  • Review and update the training program on a yearly basis or as required.
  • Orientation for new employees
  • In class training and On-site training
  • On-going training for current employees, operators, lead hands and supervisors
  • GMP training, Meat Handling and SOP's and CVS task related re-training
  • Maintain up-to-date training records.
  • Weekly GMP trends and opportunities for continuous improvements

Personal Development

  • Remain current with technical knowledge in areas of responsibility.
  • Attend regular 1:1 coaching/update sessions.
  • Develop and review personal plan ensuring that it contains personal development goals as well as goals that support the key initiatives of the organization

QUALIFICATIONS :

  • Post-Secondary Education in a related discipline preferred
  • HACCP training and certification
  • Minimum of 3- 5 years of experience in food manufacturing
  • Previous experience with HACCP program development and management
  • Excellent interpersonal and communication skills

WORK CONDITIONS

  • Cold environment
  • Noise levels may exceed 85 DbA (hearing protection is provided)
  • May be required to work both shifts and an occasional weekend.
